Plus when the Roman soldier put his speer into Jesus side, blood and water came out which is proof of his death! But … Christ has risen and He has appeared to many people over the centuries, Muslims included, AND He has revealed Himself to me too! All glory to our King! He is the LORD and He will restore to Israel all the enemy has stolen from them! 🙏
It's also important to explain to them that Jews thought of the waters and going down into them as a metaphor for death and descent into chaos or the realm of the dead. If I'm not mistaken his reference to Jonah in such a context would mean he's drawing attention to that proverbial death of Jonah and "resurrection" when The fish expulsed him after the appointed time. It even says in Jonah 2:2, 6 NIV
[2] He said: “In my distress I called to the Lord, and he answered me. From deep in the realm of the dead I called for help, and you listened to my cry.
[6] To the roots of the mountains I sank down; the earth beneath barred me in forever. But you, Lord my God, brought my life up from the pit.
So it's not only disingenuous that they would try and use Matthew 12 and ignore other parts of Matthew, it's also disingenuous given what Jesus' hearers would have understood by his quotation of Jonah AND the actual context of the passage he was referring to IN the prophet Jonah in the first place.

Although it is true that people sometimes contradict themselves, there is no reason to think that Matthew did in his gospel (especially if you believe in verbal inspiration). Understanding the clear passages of Matthew (Matt. 16, Matt. 27, Matt. 28 that you quoted) shines the light of understanding on the words of Jesus that Matthew quoted in Matt. 12. That is, it helps our fallen reason understand what God is revealing in the gospel: Jesus would suffer and die and rise again on the third day for sinners.
A profound statement…that one must die before one will resurrect. Think how that would change the face of Christianity, if it was followed. (Gal 2:20). Every believer wants to walk in "resurrection life" but nobody wants to die.
